If you didn’t feel enough burn from the chili cabros in the local cuisine, wash it down with a tall pitcher of ginger beer! This is a popular Caribbean creole favorite usually brewed for birthdays, holidays and other special occasions. It can be a bit strong and will sting going down if you made it right!
- 2 pounds of ginger
- juice from 12 limes
- 2.5 gallons of water
- 2 packets of cloves
- 2 packets of allspice
- 1 pinch of yeast
- raspberry juice (or flavoring) to taste
- vanilla and cinnamon to taste
- sugar to taste
This is a simple recipe. Just liquefy the ginger and mix it with the water, cinnamon, yeast, allspice and cloves. Leave it to sit (outside the fridge) for two full days. On the third day, strain the mix and add in the raspberry flavoring and vanilla. Sweeten to taste and enjoy!
